Chicken Parmigiana is a chicken dish based on the Italian Parmigiana, it is chicken breast covered with a tomato-based sauce and cheese. Here are the ingredients:
Boneless, skinless chicken breasts (pounded thin)
Salt and pepper
2 cups all-purpose flour (seasoned with salt and pepper)
4 eggs, beaten with 2tsp. water (seasoned with salt and pepper)
2 cups bread crumbs
1 cup vegetable oil
Tomato sauce (recipe below)
1 pound mozzarella cheese (thinly sliced)
1/4 cup Parmesan cheese
Fresh basil or parsley for garnish
2 tbs. olive oil
1 large onion (finely chopped)
4 cloves garlic (chopped or mashed)
2 (28-ounce) cans plum tomatoes and their juices(pureed)
1 (16-ounce) can crushed tomatoes
1 small can tomato paste
1 bay leaf
1 small bunch of parsley
1 Cubano chile pepper (chopped)
Salt and pepper to taste.
Preheat oven to 400 degrees F.
Season Chicken with salt and pepper. Place the chicken in flour and tap the chicken to remove excess flour, dip in egg and let excess drip off then dredge in bread crumbs.
Heat a pan and pour oil and let it smoke. Add the chicken breast and cook until golden brown (about 2 minutes per side) set aside with some tomato sauce on top.
Before baking, add slice of mozzarella, salt, pepper and Parmesan cheese. Bake until the cheese melted it takes 5 to 7 minutes. Remove from the oven and garnish with parsley.
For Tomato Sauce
Heat pan, add olive oil and add onion, garlic and cook until soft. Add pureed tomato sauce, crushed tomato sauce and tomato paste. Add water (it will depend on the desired consistency), add bay leaf, pepper and bring to boil. Season to taste and reduce heat and it is done when the consistency of the sauce thickened.
