Chilaquiles (Mexican Cuisine)


Chilaquiles – corn tortilla cut into quarters and lightly fried, this dish is a traditional food of Mexicans. The green or red salsa is poured over the tortilla called “totopos”. This is very delicious that you have to eat when you are in Mexico, this is a must try dish.

It is a little bit spicy but the spiciness will be depending on the eater. You can adjust the spiciness of this dish. Also, this is perfect dish while watching movie or in a party. Many variation or types of this dish made but the classic taste of the Chilaquiles is very distinctive, the perfectly simmered until the tortilla starts softening and the creamy toppings of it. If you want to make your own Chilaquiles, here are the ingredients.


2tbps. Olive Oil
2tbps. Pumpkin or Sunflower Seeds
1 garlic Clove (finely chopped)
1 small onion (finely chopped)
4 dried mutalo chilies (available online)
A pinch of cinnamon
A slice of bread
4 cooked chicken breasts (shredded
300g. salted tortilla chips
100g. cheese (cheddar, mozzarella or any)
Sour cream


Soak the dried mutalo chilies in boiling water and set aside.
Heat a pan, put olive oil, and fry the seeds, garlic and onion for a few minutes. Remove the stalks of the mutalo chilies and drain the water.
In a food processor, add 250ml. of water and add chilies with the onion mixture, cinnamon and the bread until it smoothen.

Heat the remaining oil, and warm the sauce but do not let it boil. Non-stop stir until it thicken and become glossy. Heat the grill while you are arranging the tortilla chips and shredded chicken breast. Pour the sauce in the tortilla and grill until the cheese has melted and it is perfect with sour cream.

Isn’t it easy to prepare? You can add also hot sauce or mushroom if you want and this is perfect with some beverage like smoothie or iced tea. The preparation of this dish is 15 minutes only while the cooking is about 10-12 minutes depending on the cheese if it has melted already.

This is really great for casual gathering, parties watching movies. The sour cream has a lot of additional taste in the Chilaquiles and also the mutalo chilies, so you might want to order it earlier for you to prepare Chilaquiles perfectly. Happy Eating to us!!!
