Croquettes is small bread crumbed fried food from Spain that roll containing mashed potato and ground meat.
Croquettes are not just popular in Spain but in other country as well, in Belgium, they have a variety of Croquettes that filled with shrimp and garnished with a slice of lemon and deep-fried parsley. They have different version of Croquettes because parsley and lemon are their favourite addition in every meal.

In France, using ingredients such as truffles, sweetbreads and cream cheese are they main ingredients of their Croquettes. In Germany, Austria and Switzerland plain potatoes is their main recipe of Croquettes. But the main reason why Croquettes are made because of the recipe of Croquettes is very easy to have and to make. You can make Croquettes in these simple ingredients.


Potato Croquettes

INGREDIENTS:

2 tbsp. powdered milk
Salt to taste
1/2 teaspoon pepper
1/2 teaspoon green onion (chopped)
2 egg yolks(beaten)
3 tablespoons all-purpose flour
4 cups mashed potatoes
1 egg (beaten)
Sifted dried bread crumbs
Peanut oil, enough to fill pan 1/2-inch

PROCEDURE:

In big bowl add milk, salt, pepper, chopped onion, beaten egg yolks and flour to mashed potatoes. Chill and then shape using an ice cream scoop. Dip in the beaten egg, and then roll through bread crumbs. Fry each croquette in oil until it turns golden brown.
Note: It is advisable not to overcrowd the pan so that the Croquettes will cook evenly.
