Dulce De Leche (Argentine Cuisine)


Dulce De Leche is one of the popular national spread used to fill cakes or pancakes, it could be filled in toast bread and even ice cream flavour.

The sweet taste of Dulce De Leche is prepared by slow heating of sweetened milk that creates a taste from Maillard reaction (it is a chemical reaction between amino acid and reducing sugars that gives different flavour by the time it turns brown), changing flavour and colour.

Dulce De Leche is literally translated as made of candy or made of milk. You can make your own version of Dulce De Leche. Here are the ingredients.

There are two types of preparing Dulce De Leche, there is classic method that will allow you to control the sweetness of your Dulce De Leche and the sweetened condensed milk method is mostly the easiest procedure to make.


For Classic Method

4 cups milk
1 1/4 cups sugar
1/4 teaspoon baking soda
1 teaspoon vanilla
For Sweetened Condensed Milk Method

1 can sweetened condensed milk


Classic Method

In a saucepan, mix milk, sugar and baking soda and bring to boil.
Once it boils, reduce the heat and simmer the mixture uncovered.
Stir occasionally until the mixture caramelized and thickened.
It will take for about 1 ½ hours until you achieve the perfect consistency.
Add vanilla and transfer to a bowl to cool the mixture.

Sweetened Condensed Milk Method

Heat oven to 425°F with rack in the middle.
Pour the condensed milk into a 9-inch deep pie plate and cover with foil.
Set the plate into the roasting pan and add hot water just to reach the half of the pie plate.
Bake for about 45 minutes and always check the water, if the water lessen, add simultaneously.
If you want the consistency of Dulce De Leche thicker, add 45 minutes more.
Remove from the oven and let it cool, uncovered.
