Lomo Saltado (Peruvian Cuisine)


Lomo Saltado – a popular dish of Peruvian, it is stir-fry dish that typically combines with marinated strips of onions and other ingredients. For complete recipe you can see it below.

Peruvians main course has variety of flavours and colouring in their dishes that reflect their native heritage. The traditional cooking has merge when the foreign cooking style and immigrants visited Peru, flora and fauna has local cuisine that adapts the natural resources available that is why they came up with this cuisine.

Lomo Saltado symbolizes the Asian techniques of preparing foods; the fusion of the ingredients has a lot of help creating this dish. It made more delicious because it was mixed up with French fries and served with rice.

500g beef tenderloin
2 tbsp. soy sauce
2 red onions
2 aji amarillo / yellow Peruvian chili pepper (optional, but highly recommended) if you can’t get it you can use any other mild yellow, orange or red chili pepper
2 tomatoes
2 tbsp. Balsamic vinegar
500g potatoes
Deep-frying oil
1 – 2 tbsp.soy sauce
1 – 2 tbsp.red wine vinegar
Fresh chopped cilantro
Dash of lime juice
Salt and pepper to taste


Cut meat into small pieces and place in a bowl.
Add soy sauce and pepper.
Stir thoroughly.
Cut onion into lengthwise or strips, remove the seeds of tomatoes and cut in strips as well.
Add onion and tomatoes in a bowl with beef and add the balsamic vinegar and stir.
Let the sauce mixed well with the meat and other ingredients.
Peel potato and cut into French fries.
In a pan with high-heat, add the meat and stir fry for 2-3 minutes.
Set aside the juice and add onions, tomatoes and aji.
Add the juice of the meat when sizzle.
Stir fry until the vinegar evaporated and when the onions and tomatoes soften.
Add a dash of lime juice and cilantro for garnish.
Serve with rice.
