Colcannon (Irish Cuisine)


Irish Cuisine is a style that originated in Ireland and originated and styled by Irish people. From time to time, it evolves because of social and politics change. Because they usually plant root crops and most of them are farmers.

In 16th Century, potato has been introduced to the Irish people and they are influenced and overcome with the dish that makes their country popular and it is Colcannon.

Colcannon is a traditional dish that consisting of mashed potato and cabbage or kale. Colcannon also has a song about the dish. The song “Colcannon” also called “The Skilled Pot”, it is a traditional song to the Irish that has been recorded by many artists.

If you want to try the Irish rich Colcannon recipe, here are the ingredients.


4 russet potatoes (2 to 2 1/2 pounds), peeled and cut into large chunks
5-6 tbsp. unsalted butter (with more butter for serving)
1 cup milk or cream
3 lightly packed cups of chopped kale, cabbage, chard, or other leafy green
3 green onions (including the green onion greens), minced (about 1/2 cups)


In a medium pot, put the potatoes and cover with cold water.
Add 2 tbsp. Salt and bring to boil.
After 15-20 minutes or until tender, drain.
In another pot, melt the butter in a medium-heat and add greens.
Cook the greens for about 3-4 minutes or until they are wilted.
Add green onion and cook for a minute.
Pour the milk or cream.
Mix well and add potatoes.
Reduce the heat and mash the potato until it mixed completely with the greens.
Add salt to taste and serve hot with melted butter on the top.
