Kebab (Iranian Cuisine)

Kebab is a Middle Eastern and Eastern Mediterranean dish and South Asian dish of piece of meat, vegetables and fish roasted in griller. In Eastern Mediterranean where it is mentioned by Homer as it is originated and later adopted in Central Asia and spread through South Asia and worldwide.

However, Kebab refers to meat cooked over next to flames. The traditional meat used in Kebab is lamb, lamb is the available meat for them throughout the year but now it is depending on local taste and religious prohibitions.

Iranian Cuisine is frequently used along with fruits like plums, pomegranate, prunes and etc. and also vegetables such as onions, herbs and nuts. They add this into Kebab and it has many variations nowadays.

INGREDIENTS:

1 tbsp. olive oil, divided
1 tsp. chopped fresh rosemary
3 large garlic cloves, minced
1 pound beef tenderloin, trimmed and cut into 1-inch cubes
1/2 tsp. kosher salt, divided
1/2 tsp. freshly ground black pepper, divided
2 tsp. fresh lemon juice
2 cups cherry tomatoes
1 large red onion, cut into 1-inch pieces
1 yellow bell pepper, seeded and cut into 1-inch pieces
1/2 pound Cremini Mushrooms, stemmed and halved

DIRECTION:

Combine 2 tsp. oil, garlic and rosemary in a large zip lock plastic bag.
Marinate the beef and seal for about an hour. Turn occasionally.
After an hour, remove the beef and discard marinade.
Thread the meat in wooden of steel skewer and sprinkle with ¼ teaspoon of salt and black pepper.
In a large bowl, combine oil and the juice.
Add tomato, bell pepper, onion and mushroom.
Toss to coat.
Thread each vegetable in a skewer.
Sprinkle with salt and pepper.
Place the beef in burning charcoal and grill until the desired doneness of the meat.
Grill tomatoes and mushrooms for about 7 minutes.
Tip: It is best to cook the beef separately from the vegetables so that there is nothing overcooks. It is the best to prepare Kebab separately, but you can make a good serving of Kebab if the ingredients are done and make a design or garnish in every skewer.
