Ful Medames (Egyptian Food)

Egyptian usually use vegetables and legumes, and since Egypt are rich of these crops they make their crops high quality and it is one of the factor that is why they produce large quantities of vegetables. Ful Medames is serve as a morning to mid-lunch food, it is also one of the national dish of Egypt, usually served with vegetables and hard-boiled egg.

Ful Medames usually sold in the street for breakfast or brunch; it is also popular meal in Sudan, Levant, Somalia etc. The word medammes was originally Coptic (latest stage of Egyptian language) meaning to “buried” and the process of it is beans are buried in the pot.

Ful Medames was exported from Egypt, Africa, and Asia and to other parts of Arabic Speaking World. A healthy food with complete nutrition is in the dish that is why it became popular in some country that is taking care with their diet.

Here are the ingredients so that you can also have a great food to eat from the Egypt.


INGREDIENTS:

2 cups small Egyptian fava beans (ful medames), soaked overnight (and left unpeeled)
Salt
1/3 cup chopped flat-leaf parsley
Extra-virgin olive oil
3 lemons, quartered
Salt and pepper
4–6 cloves garlic, crushed
Chili-pepper flakes
Cumin
Parsley
Tomato (optional)
Hard-boiled egg (optional)

DIRECTION:

In a large saucepan, cook beans with water and cover until the beans are tender and softened.
Remove the lid and let is simmer for about 2 ½ hours on a medium heat.
When the water reduces, add salt and mash them with cooking liquid.
After mashing, stir until the sauce thickens.

Serve the beans in soup bowl and sprinkle with chopped parsley, hard-boiled egg.
For the dressing before serving, add oil, salt and pepper, little saucer and thinly chopped garlic.
Add chili-pepper flakes (optional) and ground cumin.

The beans are eaten gently with the fork; the beans are absorbing the dressing that is why it became more delicious.
