Moroccan Roasted Vegetables (Moroccan cuisine)


Moroccan cuisine is influenced by the Morocco’s exchanges and interactions and also with the other nations and cultures over the centuries. Most of the recipe and dish they made has a lot of herbs and spices; since they are rich in herbs and spices most of their food has two to three types of spices and seasonings.

It is a big help to them to improve the taste of their food since their taste is very sensitive. In addition to that, Moroccan is more of vegetables and fruits, but they also popular with the meat like beef, lamb and mutton.

Moroccan Roasted Vegetables is one of their popular dishes; it is made delicious spicy and roasted vegetable that you will surely love. It is served with different kinds of vegetables, health and flavorful dish.

1 Onion cut in 1/4-inch slices
1 zucchini cut in 1/4-inch thick semi-circles
1 eggplant, peeled, cut in 1/2-inch thick semi-circles
1 sweet potato, peeled, cut in 1/4-inch semi-circles
1 red pepper, sliced in 1/4-inch strips
2 tomatoes, fresh, chopped
15 oz. chickpeas, drained and rinsed
3 garlic cloves, minced
2 tbsp. olive oil
1 tbsp. lemon juice
1 tbsp. cumin
1 ½ tbsp. turmeric
1 ½ tbsp. cinnamon
1 ½ tbsp. paprika
¼ tbsp. Cayenne


Preheat oven at 400°F.

In a large bowl, combine all the vegetables and garlic.
In a small bowl, combine all the spices and oil.
Combine and mix all the ingredients and put in tray.

Bake for about 20 minutes.

Remove from oven, mix well and bake for another 20 minutes.
Serve warm.
