Goulash (Hungarian Cuisine)

Goulash or gulyás in Hungary is a stew of meat and vegetables; it is seasoned with paprika and other spices. This recipe is popular meal in Central and Southern Europe and Scandinavian.

Main ingredient of this dish is meat, noodles, and vegetables like potatoes and also paprika. The word gulyás is from the word gulyá which means ’’Herd of cattle”, and gulyás means ’’Herdsman”.

Hungarian Cuisine is the cuisine of the nation that characterizes the ethnicity of their group, traditional dishes are based on a meat that has seasonal vegetables and also fruits and fresh breads.

Hungarians are very passionate about meat stew and vegetables because mixing of this primary food is very traditional to them. Most of the Hungarian Cuisine is spicy due to their common spices use of hot paprika however they also has sweet paprika that is also common to their country.

Goulash can be beef, veal, lamb or pork. The typical part of the meat is shank, shin or shoulder of the meat; this is the tender part of the meat and easy to cook since the vegetables are also cooked fast.

Cooking the vegetables fast is to maintain the nutrients, if you want to cook Goulash at your home, below are the ingredients.


INGREDIENTS:

3 tbsp. vegetable oil
2 lbs. beef stew meat
3 tbsp. flour
2 cups cooked egg noodles (optional)
1 can beef broth
1 cup onion, chopped
2 tbsp. tomato paste or ketchup
2 tbsp. paprika
½ tsp. salt
¼ tsp. black pepper
⅓ Cup water

DIRECTION:

In a pot with medium heat put oil.
Add the beef and cook until tender and sides are browned.
Add broth, onion, tomato paste, paprika.
Add salt and pepper to taste.
In a bowl, mix water and flour.
Stir to remove the lumps.
Pour the mixture in a pot gradually and stir continuously.
Cover and let it simmer in a low heat.
After 1 ½ hours, stir occasionally.
Serve.
Note: It is optional if you like to add the egg noodles. For me it is best adding potatoes rather than noodles. Let the potatoes tender and mashed. Add salt, pepper and parsley and shape it ball-like. Garnish it with red bell pepper.
