Smetana Borscht (Ukrainian Dish)


Ukrainian cuisine has a rich history, they have salad and appetisers like kovbasa that typically eaten for breakfast also Salo, Studenetz, Olivier and more.

Breads are the most important product to Ukrainian cuisine, it is a decoration on the top and can be elaborated for celebration. It is their tradition to place bread on top of the fish they made, with different taste and techniques of baking the bread.

Soups, it is the popular food in Ukraine and one of the popular soups in Ukraine is Borscht. It is a vegetable soup made out of beef, cabbage, potatoes, tomatoes etc. There are about 30 varieties of Borscht and one of the most popular is the Smetana Borscht.

Smetana is one of the sour cream in Ukraine. Smetana is a dairy product with 10-30% if milk fat and it is widely used for baking and cooking.
Smetana Borscht can be vegetable, also chicken and other meat is perfect for this recipe.

If you want to taste of one of the recipe of Ukraine, here are the ingredients of Smetana Borscht.


2 lbs. beef soup bones
2 quarts water, or more as needed
12 carrots, chopped
6 potatoes, cubed
1 head cabbage, finely chopped
3 onions, minced
1 ½ tbsp. chopped fresh parsley
10 whole allspice berries
1 bay leaf
1/2 star anise
1 tsp. salt
1 pinch ground black pepper
1 1/2 cups chopped tomato
1/2 cup Smetana


In a large pot, pour water and bring to boil.
Drop beef bones over high heat.
Reduce heat and simmer for 1 ½ hours.
Add water if necessary.
Remove the bones and strain the broth in another pot.
Bring to boil. Discard the bones.

Add potatoes, onion, allspices, bay leaf and simmer for about 10-15 minutes.
Add cabbage, star anise, salt and pepper and simmer again for 5 minutes.
Add parsley.
Serve with Smetana on top.

Note: Adding corn starch will help your soup thick if desired. The rich red color is the soup is enticing to eyes, and also the rich flavour and creamy taste of this dish is a must taste.
