Jollof Rice (Nigerian Cuisine)

Oh! It is Nigeria’s turn, since I mentioned the popular dishes, I will write one of the popular dishes in so many parts in West Africa. Jollof Rice, it originated in Nigeria and it is spread all over the whole West Africa. Togo, Ghana, Liberia and Sierra Leone eventually get the Jollof Rice. Rice, tomato, tomato paste are the basic and important ingredient of this recipe.

Nigerian cuisine is consisting of dishes or a food item that usually uses spices and herbs; flavored sauces and soups often made very spicy because it has a lot of chili peppers. Their feasts are very colorful and lavish, the aromatic market and roadsides snacks will give you the idea of what really are they type of food.

Jollof Rice can be added with any kind of meat and vegetables or spice; it will be based on your desired taste. Since we talk about this, here are the ingredients.


INGREDIENTS:

8 chickens (any part)
1 tsp. ground coriander
6 garlic cloves, sliced
½ –1 scotch bonnet chili, deseeded and chopped
A bunch of flat leaf parsley, leaves chopped, stalks finely chopped
2 tbsp. tomato purée
500g vine-ripe tomatoes, chopped
750ml chicken stock
500g long grain rice
1 tsp. ground white pepper
Vegetable oil
600g cherry tomatoes
4 onions, finely chopped
1 lemon, cut into wedges, to serve

DIRECTION:

Preheat oven to 180°C/350°F.
In a medium bowl, toss chicken, coriander, white pepper and salt.
In a sauce pan, add oil and fry the chicken until desired doneness.
Transfer the chicken in roasting-pan and cook for about 30-40 minutes.
When halfway through, add cherry tomatoes.

Using the same sauce pan, add oil and sauté onion, garlic, chili and parsley for about 10 minutes.
Stir the tomato puree and chopped tomatoes and then pour chicken stock.
Bring to boil.
Reduce the heat and put rice, pop the lid on and let it bubble for 20 minutes.
Stir the parsley, cooking juice and cherry tomatoes from the roasting pan.
Mix well and let the tomatoes get soft and mix well with the rice.
Serve the rice with chicken pieces on the side or in different plate.
Add lemon wedges and squeeze over.
Serve hot.

This dish is really great; you will get the flavorful chicken as well as delicious rice. Jollof Rice is also perfect in any meat like beef, lamb and even seafood’s like shrimp, scallops and mussels.
