Coconut Bean Soup (Tanzanian cuisine)

A lovely and spicy dish from Tanzania, it is a soup that basically has a coconut milk that makes the soup creamy. Tanzanian cuisine is a both unique and widely varied. Since the country is tropical, coconut is very popular in Tanzania because of the temperature and the weather they experience.

Coconut Bean Soup is a spicy and creamy dish that cooks most of the region in Tanzania, but every region also has different and unique foods. In Tanzania, the Ugali is also popular which I also posted in my blog.

Have a try of this dish and taste their delicious dish that will get you in their country. Here are the ingredients.


INGREDIENTS:

3 tbsp. butter
1 onion, diced
1 green chilli, seeded and finely diced (optional)
2 cloves garlic, crushed
1 red pepper, diced and seeded
1 tsp. curry powder
2 tomatoes, skinned and diced
1 can red kidney beans, drained
1 can coconut milk
1 cup water or 1 cup chicken stock
1 cup cooked chicken, chopped finely
3⁄4 cup cooked rice
3 tbsp. desiccated coconut
2 tbsp. fresh coriander

DIRECTION:

In a sauce pan, sauté onion, pepper, chilli and garlic in butter but do not overcook.
Add tomatoes and coconut milk and some water.
Let it simmer.
Stir occasionally and cook for about 10-15 minutes.
Add the cooked chicken and rice and let it simmer for about 2 minutes.
Season with salt and pepper.
Garnished with some coconut meat, coriander and some bread.
