Coffee Cream Cake


Isn’t it amazing to know the different techniques of baking? However, baking is a little bit hard to make, by just baking itself. But when you study on how to bake, you can get the techniques and also you can learn many things not just baking but making frosting’s and more.

This time, we will bake Coffee Cream Cake or CCC; I just called it “CCC” for no reason.

Baking in my kitchen is my passion for about a month ago, I used to cook but I tried something else that will expand my learning inside the kitchen.

Baking Coffee Cream cake is fun because you can decorate the outside of it and also the fillings will suit your satisfaction when you tasted this cake.

1 cup butter
2 tbsp. Coffee Powder
1 cup boiling water
2 cups AP flour
2 cups sugar
1/4 tsp. salt
1/2 cup buttermilk
2 eggs
2 tsp. baking soda
1 tablespoon vanilla

Whipped Cream Cheese Filling

1/8oz. cream cheese
1 cup confectioners’ sugar
1 cup heavy cream

Coffee Icing

3/4 cup butter
2 tbsp. instant coffee crystals
4 cups confectioners’ sugar
1/4 cup half and half
2 teaspoons vanilla extract


Preheat oven to 350°F.
Melt butter on saucepan. Add the instant coffee once the butter is melted.
Pour boiling water and remove from heat.
Whisk completely until combined. Set aside.
Add in flour, salt and baking powder in a large bowl and pour batter mixture.
In a separate bowl, mix buttermilk, eggs and vanilla.
Pour the butter mixture and stir well.
Prepare the pans and pour batter into pans and cook for 13-16 minutes.
Let the cake cool to room temperature then cut in half creating four layers.
Place all the layers in freezer for two hours.

For the Whipped Cream Cheese Filling

Add cream cheese to mixer and add in sugar and heavy cream and mix well.
When light and fluffy consistency transfer to a bowl.

For Coffee Icing

In a low-medium heat, melt butter then add the coffee.
Whisk in half and half and turn off the heat.
Add sugar and vanilla and whisk until it combines completely until there are no lumps.
Set aside and let it cool for about 5 minutes.

To assemble cake, place one layer on cake stand and cover in whipped cream cheese frosting.
Place another layer and add more frosting.
Continue until all layers are placed.
Spread the coffee icing until the layers are hidden.
Add some chocolate shaving on the top if desired and some cherries.
