Lemon Cupcake: Tasty and Fun to Do

Cupcake was originated in United States alternative names are Fairy cake and Patty cake. It is consisting of butter, sugar, egg, flour and frosting if desired and other decoration.

Cupcake is a small cake that designed to serve for a one person, it is baked with paper or aluminum foil. As with larger cake, the only difference of cupcake is their size, the icing, other decoration like candies, marshmallows etc. is just the same.

There are many variation of cupcake, just like the large cake we used to. Chocolate, vanilla, strawberry and lemon cupcakes are just the popular cupcakes.

Since chocolate and vanilla is the most favorite of many I will be making Lemon Cupcake for a change, normally chocolate and vanilla are also flavour of ice cream but then making lemon cupcake is also good to make.

In addition to that, it is fun to do with children, let them decorate their cupcakes and share it to their friends. Different candies, marshmallow, chocolate chips will accompanied in your cupcake.

Having a hard time making lemon cupcake, I will help you to make your recipe easier and affordable. Here are the ingredients.



INGREDIENTS:

For the cupcakes:

1 ½ cups all-purpose flour, spooned and leveled
1 tablespoon finely grated lemon zest
1 ½ teaspoons baking powder
¼ teaspoon kosher salt
½ cup (1 stick) unsalted butter, at room temperature
¾ cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
½ cup whole milk

For the frosting:

½ cup (1 stick) unsalted butter, at room temperature
1 ½ cups confectioners’ sugar
2teaspoons finely grated lemon zest plus 2 teaspoons fresh lemon juice
¼ teaspoon kosher salt

DIRECTION:

To make the cupcake:

Heat oven to 350°F.
Line a 12-cup muffin tin with paper liners in each circle.
Whisk flour, lemon zest, salt and baking powder in a large bowl and set aside.
Using an electrical mixer, beat sugar and butter until fluffy on a medium-high speed , it will take 2 to 3 minutes.
Add the egg, one at a time.
Add vanilla and scraping down the side of the mixer as necessary to mix well.
Reduce the speed of the mixer to low. Add the flour mixture prepared earlier.
Add the milk in 2 additions, at the beginning and ending with the flour mixture.
Mix when all the mixture combines but do not over mix.
Divide the batter evenly in the muffin cups.
Bake until the toothpick is clean when inserted in the center, it will take for about 15 to 20 minutes.
Cool and transfer to a rack and cool completely.

To make the frosting:

Using electric mixer, beat butter and sugar on medium- high speed until light and fluffy.
Beat in the lemon zest, juice and salt. Frost the cupcake.

Adding toppings is optional, you can add your favorite candies and other sweet in this recipe but if you are looking for a classic lemon cupcake taste, you can add some grated cheese on top of it.
