Fruitcake: Light, Delicious and Affordable Cake

Globally, fruitcake is popular; in Australia, Bahamas, France, Canada, Germany and Ireland are some of the country’s fruitcake lover. Every country has different variation and technique and mostly served during holidays like Christmas and New Year.

Fruitcake is a cake that simply has different kinds of candied fruit and some has nuts, dried fruits and spices. In addition to that, it is soaked in spirits or distilled beverages.

I won’t keep you waiting, here are the ingredients.



INGREDIENTS:

3 cups coarsely chopped Brazil nuts or other nuts (walnuts, pecans or hazelnuts)
1 pound pitted dates, coarsely chopped
1 cup halved maraschino cherries
3/4 cup all-purpose flour
3/4 cup sugar
1/2 tsp. baking powder
1/2 tsp. salt
3 eggs
1 tsp. Vanilla extract

DIRECTION:

Combine nuts, dates and cherries in a large bowl.
Add flour, baking powder, sugar and salt.
Mix completely until both mixtures combine together.
Beat eggs until foamy in a small bowl.
Add vanilla.
Fold into nut mixture and mix completely.
Pour into a grease and parchment paper-lined 9-in. loaf pan.
Bake at 300° for about 1-2 hours or until a toothpick inserted to the center comes out clean.
Let it cool for about 15 minutes before removing from pan.
Serve with red wine.
