Coconut Roll: Easier to Make than it Looks

Coconut Roll is doughy, sweet and colorful coconut bread; usually made at home and sold fresh by vendors using their bicycle.

It is best and delicious at any time of the day even it is cold; because of the desiccated coconut it gives a lot flavor of this dish. Adding different color and design is so much easy to make. In addition to that, it is healthy and good to share because you can make a lot of this in an affordable price.

The recipe is very affordable and easy to look, I won’t keep you waiting and here are the ingredients.



INGREDIENTS:

For the Dough

1 tbsp. active dried yeast
75 ml. (3 fl oz. /scant ⅓ cup) warm water
85g (3 oz. /⅓ cup) caster (superfine) sugar, plus 1 tsp.
170 ml. (6 fl oz. /¾ cup) milk
60 g (2 oz. /¼ cup) lard or butter
2 tsp. vanilla extract
675 g (1 lb 8 oz. /5½ cups) white bread flour
Vegetable oil
2 eggs, beaten
2 tbsp. melted unsalted butter
1 tbsp. maple syrup

For the Filling

450 g (1 lb. /5 cups) desiccated coconut
225 g (8 oz. /scant 1 cup) caster (superfine) sugar
½ tsp. ground allspice
½ tsp. ground cinnamon
1 tsp. mixed essence or vanilla extract
A few drops of assorted food coloring

DIRECTION:

Dissolve the yeast in warm water in a small bowl to make the dough.
Add 1tsp. sugar and cover for about 10 minutes.
In a medium-pan, warm milk until nearly boiling and add butter or lard and sugar.
Remove from the heat when melted and sugar has dissolved.
Let it cool and stir in the yeast and vanilla extract.

Slowly work in the flour with your index finger until you achieve a soft dough forms.
Let it become smooth and elastic.
In a large mixing bowl, place the dough ball (greased with oil).
Cover with cling film and set aside for at least 2 hours or until the dough has double in size.
Punch the dough and cut in half and cover for about 15 minutes.
Preheat oven to 190°C.
Combine all the ingredients for the filling, except food coloring.
Add enough drops of the food coloring to turn the mixture in desired colors.

Roll each half of the dough into rectangular shape.
Brush with melted butter.
Smooth half of the filling mixture over each of the rectangular.
Roll the dough up lengthwise and seal the edges.
Leave to prove for 50 minutes.
Brush the rolls with maple syrup.
Bake for 30 minutes until golden.
Cool on a wire rack.
Sprinkle some desiccated coconut before serving.
