Sweet Blueberry Tart


Since many of the readers loved the Pastel de Nata, I overcome with the idea of making another version of tart that will surely make your day even more exciting.

A Sweet Blueberry Tart is one of the popular recipes that have been created for a long time, but first what Tart really is? Tart is a baked dish consisting a filling over a pastry base with open top. The open top of the dough filled with different fruits and other sweets, like strawberries, kiwi, blackberry and chocolate.

For the Crust:

1 1/4 cups all-purpose flour (spooned and levelled), plus more for dusting
1/3 cup sugar
1/4 tsp. salt
8 tablespoons (1 stick) cold unsalted butter, cut into small pieces

For the Filling:

6 cups (six 1/2-pint containers) fresh blueberries, rinsed and dried
2 tbsp. corn starch
2 tsp. finely grated lemon zest
3 tbsp. fresh lemon juice
1pc. raspberry (for the top)
2/3 cup sugar
Pinch of salt


Preheat oven to 375degrees.
Combine flour, sugar, salt and butter in a mixer.
Process until large crumbs form.
Transfer the dough to a 9-inch round tart pan with removable bottom and up side.
Freeze until firm for about 20 minutes.
Prick bottom of the dough all over with a fork.
Bake until desired color or about 20-25 minutes.
Reserve 1 cup of the prettiest blueberries and a strawberry for topping.
In a medium saucepan, bring ¼ cup water and 1 ½ cups berries to a boil.
When boiling, reduce heat and stir occasionally while simmering until the berries break down.
In a small bowl, mix 2 tbsp. corn-starch with water.
Stir into berries in pan.
Add lemon zest and juice, sugar and salt.
Bring to boil.
Stir occasionally until the mixture begins to thicken, 30-60 seconds.
When the consistency achieved, remove from the heat and stir the remaining 3 ½ cups fresh berries.
Immediately pour hot berries mixture into the cooled tart shell.
Smooth with spatula.
Scatter reserved berries on top, pressing down lightly to help them adhere.
Let it cool and refrigerate to cool more.
Advisable to refrigerate overnight.
Top with raspberry for garnish and to add some color.

It is easy to bake Sweet Blueberry Tart, you have to be more creative when garnishing. You can grate some cheese on the top of it.
