Homemade Quark Bread

Quark is a diary product that is commonly used in German-speaking countries and Northern Europe, Quark is translated as curd cheese, farmer cheese and cottage cheese.

Making Homemade Quark Bread is a little bit hard, but when you usually bake loaf and some type of bread, you can easily get and understand the process of preparing Homemade Quark Bread.

Quark is a hard to find since it is usually available in Northern Europe, but you can find it in some market but the price is a bit high, find the best brand so that you can get the fresh dairy product and your bread will be perfect.

INGREDIENTS:

300g All-Purpose flour
150g Whole Wheat flour or Oat, possibly extra for dusting
100ml Warm water
1 package of active dry yeast
170g Quark cheese, room temperature
1 egg, room temperature
7g salt
About a tablespoon of sugar (you can add more if you like a sweeter bread)

DIRECTION:

Combine all your dry ingredients in a large bowl (flours, yeast, salt, and sugar).
Mix egg and Quark in separate bowl.
Combine and mix well both dry and wet mixture in bowl until there is no more loose flour.
Turn out your dough and punch down.
Let it rest for 5-10 minutes after punching.
Preheat oven to 232oC.
Pat the dough out into square probably about the size or your hand with your finger spread out.
Fold in your dough about ¼ of the way and press the seam.
Place the loaf seam side down on a sheet pan.
Flour the top with all purpose or oat flour.
Cover and let it rise as a free-formed loaf.
Let it rise for about 30-60 minutes.
Serve.

The hard part of achieving inside the loaf is the hole. We don’t want to eat loaf with hole inside right, so it is very advisable to punch your dough, but I don’t know if that is the right process so that we can avoid having a holes inside the bread.
