Dreamy Orange Cream Cupcakes

Orange Cupcakes are one of the best cupcakes I’ve tasted so far; the sour and sweet taste of this cupcake is just perfect for afternoon snack. Usually I share Dreamy Orange Cream Cupcakes to my visitors and the loved my cupcakes.

Cupcakes usually have a frosting, but my way of preparing this is unique it doesn’t have a frosting but it has a special mixture at the bottom of the cake and I want to share it to you.

Some of my friends told me to start up a cupcake business, using my own recipe and way of cooking. The procedure or this recipe is just too easy for those who usually bake cupcakes or cakes and also for the beginner they can also pick up easily the process of preparing this recipe.

INGREDIENTS:

1½ cups all-purpose Flour
1½ tsp. Baking Powder
¼ tsp. Salt
2 large Eggs, at room temperature
2/3 cup Granulated Sugar
12 tbsp. (1 1/2 sticks) Unsalted Butter, melted
2 tbsp. Finely Grated Orange Zest
1 tsp. Orange Food Color
1 tsp. Vanilla Extract
½ cup Milk
Chocolate
Crushed Almonds

DIRECTION:

Preheat oven to 350oF and line a muffin pan.
In a medium bowl, whisk flour, baking powder and salt.

In a large bowl with a mixer, beat the eggs and granulated sugar in medium-high speed until fluffy.
Reduce speed and slowly pour melted butter and add orange zest, orange food color and vanilla.

Beat the flour mixture in 2 additions and alternate with milk at the beginning and at the end of the flour mixture.
Beat until just combine and avoid over mixing and set aside.

Melt chocolate and add crushed almonds, the almonds should me completely crushed or powdered as needed.

Divide chocolate mixture evenly among the muffin pans greased with butter, about 2 tbsp. each.
After diving, divide the batter evenly also, about 2/3 filling each muffin cups.

Bake until a toothpick inserted into the center comes out clean; it will take for about 18 minutes.
Let it cool for about 2 minutes at the refrigerator to cool the chocolate at the bottom of the cupcakes.
Remove the cupcakes in a muffin pan and you will see the perfect color combination of orange and chocolate.
Serve.

I usually serve Dreamy Orange Cream Cupcakes with orange slice on the side and sprinkle some chocolate shavings for the garnish and hot creamy coffee as well.
